1) Monastic spaghetti with nuts

INGREDIENTS
1 cup grated almonds and walnuts
1/2 kilo of spaghetti
1/2 teaspoon cinnamon

IMPLEMENTATION
Boil the spaghetti normally and strain it. Put them in a bowl and mix them with grated almonds, walnuts and a little cinnamon. The food is served hot.

2) Pasta with mushrooms and creamy cashew sauce

INGREDIENTS
8 tablespoons olive oil
4 cloves garlic
4-5 spring onions
500g mushrooms
400g cashew nuts
300ml milk
juice & zest of one or two lemons
5-6 handfuls of spinach
2 teaspoons oregano
2 teaspoons sage
2 teaspoons nutritional yeast (optional) or juice from the pasta you will cook
500 g spaghettiSalt and pepper

IMPLEMENTATION
Start by boiling salted water in a large, deep pan and tossing in the pasta. While you wait, put the cashews in another pan or saucepan, with an amount of water just enough to cover them and boil them for 15 minutes, until they soften. Heat a little olive oil (3-4 tablespoons) in a pan and sauté the garlic and onion, after you have first chopped them.Cut the mushrooms into slices and put them in the pan for 5 minutes.Drain the cashews and beat together with the milk in a food processor until it becomes a homogeneous mixture. Lower the temperature of the garlic and onion and add the cashew cream, yeast (optional) and lemon juice. If you want, add a little salt and pepper and let it simmer for 3-4 minutes. When your pasta is ready, strain it and mix it with the cream. At the end, add the spinach and herbs along with the lemon zest. Mix well and let it rest for 5 minutes. Serve warm and enjoy the amazing taste and texture!
